About the Producer/Farm
This exceptional Sidra Bourbon natural coffee comes from Finca San Gabriel, located in the highlands of Palestina, Huila, Colombia. The farm is managed by Don Linarco Rodriguez, a third-generation coffee grower whose family has cultivated coffee on this land for over 50 years.
With the support of the CADEFIHUILA Cooperative, Don Linarco has spent the last decade refining his approach to experimental varietals and processing methods—efforts that earned him a second-place award at the 2021 Cup of Excellence. He is known for his disciplined, detail-driven style, and a deep respect for both quality and sustainability.
His process for this Sidra Bourbon exemplifies that philosophy: the cherries undergo a 90-hour dry fermentation in sealed barrels, followed by a 28-day slow drying phase and a 15-day resting period to allow the flavors to stabilize. This “low and slow” approach is key to unlocking the coffee’s expressive, fruit-forward profile while preserving clarity and balance.

Located at 1,710 meters above sea level, Palestina, Huila is part of one of Colombia’s most prized coffee regions. Huila’s diverse microclimates, volcanic soils, and steady rainfall create optimal growing conditions for complex, high-density beans.
Finca San Gabriel’s surrounding environment—rich in native shade trees and biodiversity—supports slow cherry maturation and encourages vibrant acidity and sweetness in the cup.
