This Red Bourbon lot comes from La Macarena, one of the farms under the direction of Wilton Benitez, a celebrated producer known for pushing the boundaries of precision processing at Granja Paraíso 92 in Cauca, Colombia. Grown at 1,900 meters above sea level, this coffee represents the intersection of agronomy, microbiology, and flavor engineering.

Wilton’s approach is rooted in innovation—every stage of production is carefully controlled, from harvest to fermentation. The Red Bourbon cherries for this lot are hand-picked, then undergo both size and density selection before being sterilized with ozonated water and ultraviolet light, ensuring a clean microbial environment for fermentation.

What sets this lot apart is its double-phase anaerobic fermentation. The first stage takes place in whole cherries for 48 hours, using selected Saccharomyces pastorianus yeast. After pulping, the recovered mucilage and fruit-derived juices are added back to the coffee for a second fermentation stage lasting 68 hours, enhancing both sweetness and complexity. The beans are then washed and gently dried over 48 hours at 38°C, preserving their integrity and sensory profile.
