About the Producer/Farm
This coffee comes from Gao’s Coffee Estate in Menglian, Yunnan, situated between 1,500 and 1,700 meters above sea level. The estate directly manages over 82 acres of coffee land while working alongside more than 100 neighbouring farming households, extending its impact across an additional 165+ acres.
Gao’s is one of the early adopters of modern and digital agriculture in Menglian, combining soil analysis, targeted fertilization, drone-assisted pest management, and soil improvement programs with a strong focus on sustainability. Macadamia and wild winter melon trees provide shade throughout the farm, while coffee by-products are returned to the land as fertilizer.
This Sarchimor is particularly special as the variety is only entering its fourth year of harvest, making this the estate’s first production lot. The harvest was divided among Natural, Honey, and Washed experiments to explore different expressions of the variety.
For this washed lot, Gao’s uses a micro water washed process developed to preserve the clean, delicate character of traditional washed coffee while significantly reducing water consumption. Cherries are sorted by density and size using customized equipment before processing, while the separated pulp, skins, and rejected cherries are collected and repurposed as fertilizer. By eliminating conventional washing channels, the system can reduce water use by up to 60%.

Located in Menglian County in Yunnan Province, Gao’s Estate benefits from a high-elevation growing environment where cooler conditions support gradual cherry development. The estate primarily cultivates Catimor while maintaining smaller experimental plantings of varieties including Sarchimor, Gesha, Purple-leaf Typica, Yellow Bourbon, CC24, and T8667.
This first Sarchimor production offers an exciting glimpse into the variety’s potential in Menglian. Paired with Gao’s precise cultivation and low-water washed processing, it presents a delicate and distinctive profile of oolong tea, sweet plum, and maltose.
