About the Producer/Farm
This coffee comes from the Edido washing station in Yirgacheffe, Ethiopia, where coffee cherries are collected from hundreds of smallholder farming families in the surrounding highlands. Most producers cultivate coffee on small plots of land, often using traditional methods that have been passed down through generations. Coffee grows naturally beneath a canopy of native shade trees, with much of the work carried out by hand.
After harvest, only ripe cherries are delivered to the washing station, where they are carefully sorted before undergoing the washed process. The coffee is depulped, fermented to remove the remaining mucilage, thoroughly washed with clean water, and then slowly dried on raised African beds. Continuous hand-turning during drying ensures even moisture distribution, helping preserve the coffee's vibrant aromatics and exceptional clarity.
This collaborative approach, combining the dedication of local farming families with meticulous processing, has made Yirgacheffe one of the world's most iconic origins for washed Ethiopian coffees.
Region / Terroir
Located in the Yirgacheffe district of southern Ethiopia, Edido sits at elevations of approximately 1,900 to 2,200 meters above sea level. The region's cool mountain climate, abundant rainfall, fertile soils, and exceptionally high elevations allow coffee cherries to mature slowly, concentrating sugars and developing remarkable complexity.
As the birthplace of Arabica coffee, Ethiopia is celebrated for producing some of the world's most expressive and floral coffees. Yirgacheffe, in particular, is renowned for its elegant cup profile, where bright citrus acidity meets delicate floral aromas and tea-like sweetness.
This washed lot from Edido showcases the region's signature character with a clean, refined cup, offering vibrant citrus, floral aromatics, and a silky tea-like finish that beautifully reflects the unique terroir of Ethiopia's southern highlands.
