About the Producer/Farm
This coffee is produced by Elio Diaz, a dedicated farmer based in the Los Andes community of Santa Barbara, Honduras. His farm, located at elevations between 1,570 and 1,660 meters above sea level, is home to both Bourbon and Pacas varieties, carefully cultivated under the rich conditions of the Honduran highlands.
Elio’s work reflects a deep commitment to quality and precision. His dedication was recognized in 2019 when a washed Pacas lot from his farm achieved 3rd place at Project Origin’s Best of Honduras: Late Harvest auction—an acknowledgment of the skill and care he brings to every harvest.

The Santa Barbara region is renowned for producing coffees with vibrant, layered profiles and a lively fruit-driven character. The high altitude, fertile volcanic soil, and cool microclimate of this area create ideal growing conditions that bring out clarity, complexity, and a lingering sweetness in the cup.
